Hi,
I am looking for the list of filter options available for Data Management Export. Example vendor from to, >=, or date from date to.

The fields displayed in the look up are the field list in data entities.
If you are using standard entity, you need to extend it and try adding a new range in datasources or entity or bring the filter field in the list.

If you mean AOT query (and not SQL select statement), you can't define such range directly in the Query properties.
But you can add the ranges in x++ when you use the query: docs.microsoft.com/.../using-expressions-in-query-ranges
