Wondering if Dynamics 365 and CRM 2016 work with SharePoint 2019. Can someone please let me know?

It depends on what type of integration you are doing.
if you are doing old CRM List based integration, please see below for whats supported
SharePoint authentication method support
If you are using the Microsoft Dynamics CRM 2016 List Component for Microsoft SharePoint, one of the following versions of SharePoint must be available:
SharePoint 2013 or SharePoint 2013 SP1
SharePoint 2010 SP1 or SP2
SharePoint Online

According to this page, if you will be doing server side integration, then yes the CRM and Sharepoint combinations you mentioned should work.
And the following is from a bit old compatibilty list page

We are using SharePoint for our document repository. So when we go to Document in CRM, it connects to our sharepoint there. We are on Prem as well. In our links, I don't see anywhere that it says SharePoint 2019. Am I missing it? Just want to be sure that it will work with D365. Thank you.
You will have to check what type of integration method you are using at the moment.
There are two types - CRM List Based and Server Side Integration
If you want to carry on using List Based integration (this is an old approach and not recommended any more), you wont be able to use this with Sharepoint 2019.
If you go for Server Side Integration approach, yes you should be able to use Dyanmincs 365/CRM 2016 with Sharepoint 2019.

How do I find out if I am using CRM List Based or Server Side Integration?
There are few ways to check this
01. Do your users have to login to Sharepoint when the trying to go to Documents tab, does it prompt them to login to Sharepoint if they have not already logged in - This List component behaviour
02. You can check your SP to see if you have the CRM List component WSP installed
When my users are in CRM, and go to documents tab, it does not prompt them to log into sharepoint...so does that mean we are using server side integration?
Assuming they have not logged in to sharepoint on a separate tab/browser window, yes that a sign that its server side integration.
I would also check the SP collection to see if the CRM List WSP is installed
I was told that CRM List WSP is installed. I don't see a solution in CRM for it though, should I? If so, what should it be called?
