With the sales tax load utility provided by CCH to integrate sales tax, can anyone tell me which tables are being updated?

your response did not answer the question as to which tables are being updated during the upload process.  We are already using CCH and the link you posted seemed just be a promo for them.

SOP10100 gets updated with the tax amount.

    SOP10105 gets a record appended.

I have no experience with CCH.  I do know something about Sales taxes (living in Canada helps with that).  The other responses provided previously are correct if the CCH tax engine over-rides normal Dynamics GP tax processes.  If the CCH product creates Dynamics GP Tax Schedules and Details and continuously updates them, then the following might help you.

If you are in Microsoft Dynamics GP and from the menu click Microsoft Dynamics GP >> Tools >> Setup >> Company >> Tax Details.  What do you see when you click on the Magnifying Glass next to Tax Detail ID?  If CCH is loading your schedules and details, you will have a very long list indeed.

If you have SQL abilities, checking these tables:

    Sales/Purchases Tax Schedule Header Master - TX00101

    Sales/Purchases Tax Schedule Master - TX00102

    Sales/Purchases Tax Master - TX00201

If the CCH product updates it's own tables you will have to discover that for yourself.

Thanks all !  I think I was missing The Sales/Purchases Tax Master TX00201 table.
