The API documentation does not indicate how to actually read the permissions for the requested Attendees field. Anyone knows how to get this information using Events API (https://docs.microsoft.com/en-us/dynamics365/marketing/developer/using-events-api)?

As per my understanding, would like you like to get logged in user's(contact) fields data?
If so, due to event website is still hosted on Portal,
so you could try to get logged in user's web role with liquid tag, as well as other types portals.
