Which tables do I need to insert to allow user to create new, edit, view and delete?
It really depends on what You want to create/edit/modify/delete.
For each table the permission can be added separately (for example G/L account would be table 15, Customer would be Table 18, Sales documents would be table 36, Purchase documents table 38 etc... there are a lot of tables :) ), or by using one of the default Permission Sets that adds a certain block of permissions to user.
