data export to azure, no sync on delete

I have a data export setup to export data from Dynamics 365 to a SQL database in Azure.

I however want to be able to delete records in 365 without the sync deleting the records in SQL. We have huge tables taking up storage in CRM that we just don't need, but I do want to keep them in Azure for reporting purposes. How can I keep the Azure data after we delete it from CRM?

Can you manage this via the 'Write Delete Log' option ?

Otherwise you could handle this at the destination SQL end. As far as I know the Data Export Service just uses standard DELETE statements, so 2 options could be:

Write a Delete trigger on the SQL tables to either stop the deletion, or copy the data to another table

Remove the DELETE permission from the SQL user that the Data Export Service uses. This'll probably end up generating a lot of error messages, so is not the most elegant option
