You are very close on this, couple things.
You can see what's in the Launch file (Dynamics.set) through the UI, it's:
Administration -> Setup -> Edit Launch File to open this window.
You can scroll through the list to you find the product, it's there somewhere. Don't change any location values :).
Then Change the name in the Product box of the window to that product, then browse the series within the product and you should see tables such that you can use the Physical Name field to see the SQL name for that table. It wont be Dexterity System for series, likely Inventory or Project or whatever...
You need Product set to the right product, then should be easy enough to find.

Thanks for the suggestion. I only have remote access to GP so am not able to look in to the dynamics.set file.
I did look at the Resource descriptions table of the dexterity system. Didn't find the tables listed though
Not in a standard GP table. Looks like you have a one off custom dexterity product built by your VAR or a third party so I'd look in Dynamics.set for a custom dictionary that likely has your company name in it (just a guess), and then you can query against that through the UI to get table information.... then query in SQL.
Tools -> Resource Descriptions -> Tables then search the custom product.
