Has anyone used the "Set registrations end date" on the event?
There is a date/time and a website message but those don't seem to have any effect on the event registration website.
I created an event, added sessions and set this date in the past. Then published the event. It became available on the website and contacts can register without a problem as if no end date has been entered.
I would appreciate your feedback.

Thanks for letting me know of the new event portal version.
1. Is it necessary to have the 2020 release wave 1 enabled on the environment to enable this functionality?
a) Will the changes on the event portal take effect automatically if we enable the 2020 early access?
2. I am customizing the event portal and would need to merge changes with the new release. Do you have a procedure for that? We have modifications on the styles but also in code.
3. Would it be possible to receive release notes along with the new version to know what else has changed? That could potentially save us time when planning for the release.

Have you updated the event website to the latest version? The latest event website has the event registration end date functionality. Please reach out here in case you require assistance in upgrading.
You can download the latest version of the website from here docs.microsoft.com/.../manually-overwriting-sample-website
Please read the documentation carefully, and update the event website completely only if you have not made any customizations to the website (or are okay with them being wiped out).

Is your environment also trial version? In my trial version, I also encountered your issue.
However, I didn't find any related information of those three fields(Set registrations end date, Stop website registrations on, Website message)
from both event query response content and event registration response content.

What's more, due to the only article which mentioned this field was published on 3/2 this year

and the feature shall be a new feature from 2020 wave 1 release doc of marketing:
(Added the ability to set a registration cutoff date for events.)
So in my opinion, this feature would be still under testing at backend, we may need to wait for it works until next application update.(in Admin Center)
