Where can I find a PDF that outlines the changes and new features of Dynamics GP 2016 R2? Thank you for your help.

That's a good idea but it's What's New with GP 2013. I'll do some more poking around for 2016. Thank you.
I am not sure one exists as a Microsoft release. We do our own documents internally for upgrades.
When you go into Dynamics GP, under the help menu, there is usually a "What's New" option. That would be the basis for the information.
There is a PDF on the Microsoft Partner Network however I believe you will need to register/sign-in to view it:
