Customer Insights - Journeys Forms - What happens to submissions that are not contacts?

We are new to D365 Marketing and would like to create a form with Contacts as the target audience. The help page states that if the email address already exists, the existing contact will be updated.
 
What happens if the email address exists in the /Email Address 2/ field? Will it still match to that contact?
What happens if the email address does not exist? Is a new Contact created? If so, how would that person manage their password if they didn't technically create an account?
 
We are trying to create a simple newsletter sign-up form that asks for First Name, Last Name, and Email.

    1.What happens if the email address exists in the /Email Address 2/ field? Will it still match to that contact?
    The default strategy only match email address1, you need edit it if you want to match email address2.
    1)In the Duplicate records drop-down in Forms settings: Contact (default: Update contact using email): If the user submits a form with an existing email address, the form submission updates the existing record. There's no new record created.
    2)Select the bottom left menu to access Settings, Open Form matching strategy in the Customer engagement section.
    3)Find and open the Update contact using email form
    4)Click 'New Matching Strategy Attribute' button in the 'Fields' sub-grid:
    5)Select 'emailaddress2' in the mapping, Save & Close.
    2.What happens if the email address does not exist? Is a new Contact created? If so, how would that person manage their password if they didn't technically create an account?
    Yes, new contact will be created. Contact records on Marketing do not involve the setting of passwords.
