Where can I find user guides (or any other documentation or training) for NAV Classic 2009? I have only been able to find documentation for Roll Tailored Client in CustomerSource.

You should ask your Partner for Classic versions of the guides you require. In some cases, Microsoft will only supply NAV 2009 in either RTC or Classic, so you may need to revert to an older version of the guide.
Alternatively, you can use the Online Help which is installed in the application.

All 2009 documents refer to the new RTC layout in their screenshots, but the functionality itself is the same as in the CC - so you may use it as well.
However, if you really need the CC screenshots, just refer to the NAV 5.0 material which is still available on CustomerSource.
