I’m currently facing an issue in the Sales Hub model-driven application, specifically on the Opportunity form. Within the Microsoft Solutions section (an entity subgrid), I’m trying to hide the “Add New Solution” button. However, standard customization options do not seem to support this, as the button appears to be part of the default command bar and not easily configurable through typical methods like Ribbon Workbench or command bar customization.

Your best bet is unfortunately to use Ribbon Workbench. Well, also manipulate the XML but I won't recommend it here.
You should be able to add the table/form to a solution and customize it, I did the exact same thing last week in our CRM.
