We would like to add a calendar event to a user's outlook calendar after a date/time field is updated.
For instance, let's say user1 is the value of a user lookup field on Contact. Event 1 Date/Time field is blank by default, but when user1 updates it to contain data, we want 1 hr outlook calendar event made for that date/time.
We also create an appointment record at that time, so if it was easy to use the appointment record to trigger the outlook calendar event that would be ok.
I think microsoft flow might be the way to go? Does anyone have any thoughts?

Power Automate/Flow is definitely a way to go on this to achieve what you are looking for.
You can create an Automated flow to create an Outlook event using CDS as trigger and Office 365 Outlook for the Create Event action,
In this example, an event will be created when the City is field is updated on the Contacts entity.
You can select the Calendar from the Action drop down.
