Dynamics GP Application box and SQL Server box consolidation

I am working on project of Consolidating GP 10.0/2013 Application and SQL servers.

On SQL Side:
We have 9 SQL server having 2 to 3 SQL Instances (each carrying 100+ Database ranging 2 to 3 GB size each)
They need to be consolidated on 3 physical SQL servers (migrating all above instances)

On Application side:

Same as SQL, We have 2 to 3 GP Instances mapped to each GP Application box. They also need to be consolidated on 3 GP application box. Users connect to GP using citrix sessions.

I have started analysing on Cost / Benefits of above project and gathering the server existing metrics to arrive
at hardware requirement (CPU/Disk/Memory) etc. However seems there are so many aspects involved like whether GP boxes would be able to handle I/O of that many user sessions even CPU, RAM etc. increased.

Hence would like to get suggestions from Veterans here, on how to go about to achieve consolidation.
