I'm creating a workspace and I would like to choose one of the existing icons for my tile. I see that existing workspaces use Image Location: Symbol and then a name ex. Workspace_Project.
Can anyone tell me:
a) where these images are stored (can't find them as resources)
b) if there's a way, like we had in the past, to see all images on one screen?

The shared documentation page by Scott contains a link to the Dynamics symbol font. This file contains a list of standard icons and can be downloaded for your reference. This is in fact the replacement for the form with internal resources which was used in previous versions.
You can use either use symbol which are present out of the box or use your own image . All the images are stored in resource node in application explorer. Once you create new resource for image through VS then it gets copied to resources\resourcecontent folder in your model folder in packageslocaldirecotry folder.
