Is it possible to update the fields in the Activity Pane for each Activity entity? How?
What you want to do is not possible.
The activity pane is limited to Phone Call and Task.

Unfortunately, it is impossible.
First, only Phone Call and Task have this Activity Pane, and other activity entities do not have it.
The form corresponding to this Activity Pane is a Quick View Form named "Quick Form", and it is not customizable.
Therefore, it cannot be updated.
