I'm looking to simulate the various cost changes to our raw materials and want to view the impact on our finished goods cost. Is there a simulation that can be run in business central or an add-in software that can accomplish this?

Simulated production order could be used. Check the “Statistics” on the order or run the Prod. Order - detailed calculation report

If you want to fully post the order you may consider using the copy company feature. Then you can work it all the way through without impacting on the production company
