Is there going to be some kind of vacation request approval for the new Employee Self Service suite in GP 2015, or will we need to go with a 3rd party like Integrity Data??

This part is not in the GP 2015 Self Service. The feedback from customers that used it wanted more functionality than what it offered. It only updated Outlook and customers wanted to use it more for a staffing purpose or showing how many I have off this week and the functionality was not there.
We saw very small adoption of this in Business Portal.
If this is something you would like to see in the product, I would recommend to enter a suggestion, then other customers would vote on it as well.

I'm not sure on all the ISV products out there, you will want to review pinpoint at link below.
http://pinpoint.microsoft.com is a great place to look for other integrating products.
Customers that really wanted this functionality went more to a staffing calendar view to help them with the core scheduling and staffing.
