How can i undo a posted assembly order that it is created from a sales order ?

If you want to undo posted assembly orders where the items were assembled to a sales order, then you must use the Undo Shipment function on the posted shipment.
It will undo your assembly order as well.

You can search for "Posted Assembly Orders".
Open the page and then there is "Undo Assembly" in the top menu.
