I'm trying to update a specific field in a business process flow field using a workflow
Is it doable? How would you do it?

The fields added to a BPF are the same fields that you add to a form. So, it doesn't make a difference. However, if you want to make changes using a workflow and display it in real time. You should use real time workflow. Also, you can consider business rules if they can be used instead of a workflow.

each field in the process flow is also in the entity, so you can work with it just as with regular field.
Create workflow and then update the field. In case it is not on the specific form, you can find it at the end of the update form when you work on the workflow.
