In our implementation, we are generating automated emails to contacts on certain scenarios. Is there a way I can add the deliver and read receipt options to those emails, as we need to know which contact has received the email and which has not.

Overall trying to track with read receipts is generally not a trusted way to determine if emails are opened as most individuals will probably choose not to allow this to take place when they receive the email by choosing no to the question on the send receipt.
Another approach is outlined below, this is an older post but should still be valid for what you need to do.

Dynamics 365 Online has also recently come up with this type of functionality that is in preview. You can see more details here:
