In MR 2012 CU16, how can we use GL Account User Defined Fields as dimensions?
We essentially need to create a second set of Account Categories

Have you tried using the attribute filter available when you open a column definition? That typically exposes all User Defined fields among other fields.
Here is a snippet from my column definition (for context)
