While Victoria Yudin list many of the tables on her blog, and you can get some tables from Microsoft Dynamics GP / Tools / Resource Descriptions / Tables.
Here are the ones that I can remember off the top of my head.
UPR00100 - Employee Master, sounds like you have already found that one.
UPR00102 - Employee Address, Note: use both the employid and the adrscode to connect these two tables
Then there are these setup tables:
Employee PayCodes is UPR00400
Employee Deductions is UPR00500
Employee Benefits is UPR00600
But for check information I mainly use the first two and the following two tables: UPR30300 and UPR30100
There may be more but that's about all that I use.
