Delete Quantity of Damaged Without Affecting COGS Accounts

We would like to remove the Quantity of Damaged out the system. Some of them are from the past years, 2011, for instance.  However, using the "standard" procedure, i.e. Items Transfer + Adjustment, this unfortunately changes the COGS for items sold in the current year, which we try to avoid.  Is there any other procedure besides the one mentioned?

    I would also like to know how to do this. It would be great if it was part of Year-End closing procedures similar to the way Qty Sold is zeroed out at year-end

    Why does adjusting out (in essence, writing off) inventory affect COGS?  COGS should only be affected by a change in the receipt layer cost.  Can you provide an example?
