How to custom process that already handle by system ?

I Have Entity Adjustment Product, Serial Number Adjusment ,Warehouse, and Product. When i create Adjustment Product i will fill what warehouse and product that need adjustment and then quantity of the product. Example in warehouse California there is 5 apple product, and then the product need adjustment because there is 2 more apple product just arrive to that warehouse. So we create inventory adjustment with warehouse california and apple product with quantity 2 then the SYSTEM will automaticly add the quantity from 5 to 7. Now the problem is in every product have serial number, so we need to add serial number in inventory adjustment , and what i want is to prevent the SYSTEM process before serial number is added to inventory adjustment.
