Thanks for the Reply. It is not just one field but multiple fields. It also happens with out-of-the-box fields from Microsoft. All dropdown-fields in the CRM do not work properly anymore in IE. In Edge, Firefox and an older IE release everything works fine.
Its not an issue your windows. am also using the same version and am not facing any issues. the problem might not be with IE. Please check is the field is dirty.
We are on CRM2015 On-Premise (7.0.3.110) with IE 11.674.15063.00 and are facing the same issue in Win7 and Win10.
What is your IE version?

I am using CRM v8.2.1.176 (version 1612) with Internet Explorer 11 (11.1715.14393 - Update Versions 11.0.46 KB4036586).
I am not experiencing any of these issues.
What versions are you on? 8.2 RTM had some issue that were addresses in 8.2.1.
