Classic UI - Unified Interface Option Disabled. Contact and Company Entity - Assistant Option is Present in the What's New Tab.
but in Unified Interface Assistant option is not available.

In Unified Interface, the assistant control isn't part of the timeline but is a separate control.
You can add it with this button in the legacy form designer:
