Others above have provided sound advice.
In addition to what they mentioned your should also make sure to document any third party software/modules are in use. Many will require there own upgrade process and new builds of the software to be compatible with the new version of GP.
When planning upgrades I generally look at the calendar and pick the next holiday the business would be closed anyways so you have plenty of time to work through any problems with the live upgrade. I also shoot for a minimum two week testing period for users in the test upgraded environment.

The point is that you need to have access to a Customer Source account, which means you need to have an active maintenance contract with Microsoft thru a Partner/Reseller for Dynamics GP.. If that's not the case, than you won't likely be able to proceed with your upgrade. You have to find a partner first in order to get you re-instated into the support contract (in case the company let it expire)..

I have Microsoft Dynamics GP 2015 Upgrade Instructions but not sure is it same as 2018 and also suggest me to make estimates for this.

The first stop you should make is the Dynamics GP 2018 upgrade page.
Here is the link for North America. Not sure which region you are in but you should go to your local region Customer Source site.

Here you will find the upgrade paths. (You may need to install a service pack to GP 2015 before you upgrade to GP 2018).
You will also find the hardware requirements documentation as well as other documentation that you will need for performing your upgrade.
Best practices is to create a test environment to perform your upgrade in.
You ask, how long will it take. That is a hard question to answer. It depends on the hardware being used, (CPU, RAM, hard drive speeds) and of course how many databases that need to be upgraded and their size.
My advice would be to download the GP 2018 upgrade guide. Read it first from front to back to get a feel for how to do an upgrade. Then read the critical upgrade notes so that you are aware of issues that have come to light after the upgrade guide was released. Reading these guides first will be helpful so you don't get stuck part way through the upgrade or miss a helpful step in the upgrade process.
There are many others who reply on this forum who have already done GP 2018 upgrades.
Feel free to post any further questions once you get into your upgrade and run into an issue.
The other alternative is to engage your Microsoft partner who can perform the upgrade for you and should have the experience to make this a smooth experience.
