The Vendor Ledger Entries Web Services PAGE link (29) doesn't include a column of data that's visible in the Vendor Ledger Entry TABLE (25). Is it possible to modify a Web Services PAGE view to include additional columns from the underlying TABLE?

You would need to create your own custom page. However, I would recommend that you create your own query if this is for a reporting need. This will have a better performance impact on the environment. Here are some related article.

For web service page yes, you can extend that page by adding the fields you need. You cannot extend standard API pages.
