Following the CRM Dynamics on-line 2016 update, when a Task Activity is created, it automatically gets closed on it's own.

Changing the default Status Reason for an Open Task from "Not Started" to "In Progress" also seemed to fix this for us.
We had the same issue with Letters. Change the default Status Reason for Open from "Draft" to "Open" and Letters won't close automatically.
Just took half my day to identify those that were closed automatically. Tip: in our system, all had an "Actual End" date with the time as 12:00 AM. Also, they were all created and closed on the same day, but the time they were closed was always before they were created... So, I found those and opened them back up.
For us, Exchange synchronization also seemed to be the culprit. We sync every 15 minutes, and that was how often new tasks/letters would be closed out.
KenEber Thanks a lot! Your suggestion to change the default value of the field "Status Reason" worked for me. I added a new value "Assigned" and use this as default, so the task is with status "Assigned" in Dynamics, but "Not started" in Outlook - which is good, just to keep it clear until the bug is fixed.
Has anyone got hold of the HotFix?
I got this as a last answer from the above engineer:
Much sorry for the inconvenience this issue has brought to you. If the engineers could not find the hotfix number I provided to you, I suggest that you could tell them the detailed issue "SSS-Tasks are auto completed after created”.
Have anyone been more luckey that I trying to get this hotfix?
Thank you so much K1_
Hi
The KB numer is: KB3190601
You can see the whole conversation here:http://partnersupport.microsoft.com/en-us/mpndynamics/forum/mpndyncrm/server-sync-tasks-automatically-completed/8b1133b2-3358-4812-893f-30269e2badb3
If you don't have access here are some snipps from the diskussion:
I have a real problem with Tasks beeing automatically completed when serverside sync happens. I know it's a known problem I've seen several persons reporting this problem, is there a hotfix available?
On-Premise Exchange 2013 & On-Premise CRM 2016 SP1
---
From your description, I understand that Task created in CRM 2016 SP1 automatically gets completed after Sync with server side sync enabled, you would like to know whether there is any hotfix for this issue. If my understanding is not correct, please let me know.
As you mentioned, it is a known issue, and there is a workaround for this issue.
If you create a plugin / workflow that changes the “statuscode” of the task to "In Progress" upon creation of the task the sync works alright.
If the workaround is not suitable for you, I suggest that you could wait for CRM 2016 SP1 UR1.
Many thanks for your update.
Here is hotfix for this issue. The hotfix is: CRM2016-Server-KB3190601-DEU-Amd64.exe.
You may need to make a phone to ask for the hotfix. To obtain the phone numbers for a specific technology request please take a look at the web site at https://support.microsoft.com/en-us/gp/customer-service-phone-numbers/en-us?wa=wsignin1.0.
Thank you for your understanding and patience!
Should you have any concern or questions, please feel free to let me know.

It must be a support number there. And also a name. They will provide one especially if they provided a "hotfix"
K1_ - they said they can't find any records of other people raising this bug with them. Have you definitely contacted MS directly or is there a gold partner providing support for your business?
No KB number or other support number?
Sorry this is the onlything I have been able to get from MS, I tried to get a download link for 2h yesterday, but no luck, probably talked to the wrong department. Maybe someone have more luck than me.
I got this hotfix namn from a MS support guy at Partner Network Community.
That is not a URL and is a name for the generic download of CRM. Do you have better information on this?
