Have "payment" made to User every time an appointment is completed

We use recurring appointments to keep track of our customer's payments. There is a currency field on the recurring appointment form, and we put the amount due in that field. Once our customer makes their monthly payment, we close the appointment. For each payment our customer makes, a fixed amount will be owed to a specific Dynamics 365 user. I would like that each time we close an appointment (marked as completed), then at that time the amount owed to the user is somehow logged and recorded. 

Any thoughts on the best way to do this?

    You can create a custom entity with lookup that points on user and decimal field for storing of amount. Once appointment is closed you can fire a workflow that will create instance of record create before with user and amount field populated.
