Hi Marjorie,
It will not be possible to customize the crm date picker.
However once you have select the date, you can have some calculated field or java script to get the week number out of that date and put it on the form.

I was able to enable week number in d365.
By going to Settings > Administration > System Settings > Formats tab > Date tab

Just one issue, when I enable it in the Global settings...it's not automatically enabled to the Users, until you update their Personal Settings to enable week numbers too..
To be clear, the System Setting needs to be set as well as the User settings.
