Use Form Capture to map fields - Field types don't match

We have a few dozen forms currently floating around our various websites that were created before we made the switch to Online CRM. Using the Form Capture option in CRM Marketing, I figured this would be the best way to go about it. However, I have run into a snag. The original form that I am trying to capture has a field I want to map to our Lead Topic field, which is a single line of text, but the field on the form is an Option Set. What gets even more frustrating, is apparently multiple websites redirect to this form, and depending on where it redirected from, the Option Set will change. So my question for you all is this:

How can I get Dynamics Marketing Form Capture to just throw whatever they choose into a text field, instead of it forcing me to map it to an Option Set?

    Hi Nathaniel,
    Unfortunately, this is not an OOTB feature, and the marketing is designed to be so.
    Each field that appears in a marketing form must map unambiguously to a contact or lead field in your Dynamics 365 database, where values submitted for that field will be stored.
    It is recommended that you raise a support ticket to seek help from the developer.
