If you want to customize the system for practice in your trial environment, you have a couple of options.
First, if you go to Settings -> Customizations -> Customize the System, you will be able to see the default solution, which contains all the components that are part of the CRM instance.
If you want to build your own solution, and only add to it the components that you need and create new components (entities, option sets, etc...), you would go to Settings -> Customizations -> Solutions, and click on the New Solution button in the toolbar. Then in the solution that you are creating (after Saved), start adding new and existing components.

I recommend building your own unmanaged solution from scratch, and experimenting with tasks like creating entities and fields. It is definitely the best way to learn.
If you want to practice creating your own unmanaged solution you can create two trials make changes in one and import them into another. If you want to get just a random solution try GetHub or codeplex lots of stuff on there ....
