Would anyway be able to provide me with a manual for the different HR functions in GP.

The link Chris provided are the regular GP manuals for the HR module.. which shoudl normally be installed along your GP client.
Check those links as they may provide more documents about HR & PR:

Back in the old days of GP 10.0 there used to be a training class course 8885 & 8813 provided by Microsoft for the Dynamics GP HR certification.. unfortunately that training material as been removed from Customer Source and is likely only to be find thru the partners in hard copies or PDF version..

GP 2010 are the most recent guides that I know of. Now the majority of information comes from the GP blogs and resources.
Here is the link to the user guides. I tried attaching the two HR user guides but it would not save.
