Please share the details of the application you are using ? Is this happening in Dynamics 365 Online/Onpremise ?
If Dynamics 365, from the given details - I understand that you have an optionset field "Person" (dropdown) in User form which contains a set of value. When you select a value in Person field and save, the value doesnt save. Please confirm if my understanding is correct and share more details about the issue may be a screenshot of the record to assist you.
