Thanks for reaching Dynamics 365 community forum. It appears to be an issue with security role configuration for Adobe sign in.
Check if you can download the log files from the error screen popup, if it is an issue with the security role which seems to be likely here, you would see an exception like "Principal user (type=8) is missing prvReadXXX privilege". This would help you to identify which privilege is missing to caryy out the Quote activity operaion which is failing here.
Please thoroughly check this section of the document to understand if the logged on user has sufficient privileges.
Deploy Adobe Sign to Users by Assigning Security Roles ::
Every Dynamics user that is expected to use the Adobe Sign application needs to have their security role configured in the Dynamics environment.

There are three Security roles that will be added to CRM as a part of the D365 Adobe Sign solution. Dynamics user who intend to use Adobe Sign should be assigned with at least one of the roles for the solution to work.
Adobe Sign Reader –Read only access to Agreement records.
Adobe Sign User – Provides the ability for the user to work with Agreements and other application entities. This role permits user level access.
Adobe Sign Administrator – Allows permission to modify Global Settings, Data Migration and visibility of all Agreements throughout the application.
Reassign Workflow Ownership: When the solution installs there are 3 workflows that get added to the system as
RunPluginForUpdate
Trigger status update
Update status recursive
