Is it possible to edit or open a completed activity to a previous date?

I need to take a closed activity (custom created, however no different than phone call or email, etc..) so it is registered to the previous months activities, not current. Example, entered and completed an activity on 6/1 but it took place in May.

You can't edit or reopen a closed activity directly from the CRM ribbon bar. But you can create an on-demand workflow that will change its status to open. You will then be able to edit and close again.

This is possible in Dataverse using a Custom Command Bar button using Power FX.

Patch([Table Name], Self.Selected.Item, {'Activity Status':LookUp(Choices('Activity Status (Asset Logs)'), Text(Value)="Open").Value})

Hello User,

An activity that has been closed (Phonecall, Email, Task) cannot be edited or reopened.
From the CRM directly.
