If anyone can figure out what is wrong here I'd be super grateful!
I have a system admin account and I created a field level security profile. When I try to add any access to a specific field through there whether it be read, write or create I get an error saying that it doesn't have "Read privilege for attritubte "field name" of entity account.
I am on a system admin account and this worked fine without issue in our Dev environment. Any ideas what could be wrong?

Thanks Lucas, 'Publish All customizations' solved the problem for me. (D365 9.0.2 online) I got this same error in Contact entity for Contact Method/Shipping Method.
We have tried to give other users (without the system administrator role) permissions to add people to the Field Security Profile.. At first, we've got a similar error message saying that they don't have enough permissions... If we added those users to the field level security profile that gives all privileges (read, update, create), he was able to add other users as well! So this could solve this for you as well... If you or another system administrator can add you to the profile, you should be able to add other users as well. Hope this helps!
You just have to publish all customizations after creating the field. In this moment, the correct permissions for the field are created.
This issue was also occurring with our D365 8.2 online. Setting field privs via delegated admin also worked for me. It did not at first though, but when I revisited this morning I could update the profile just fine.
Hello, I found a workaround while I encountered the same issue with the CRM-Administrator (Online Environment). By setting up the privileges of the field with the delegated Admin worked for me. After this I could also change the privileges of that field with the normal CRM-Admin without the error. This was also in an updated Environment (CRM 8.1 to 8.2).
No it has not been resolved. We are experiencing the issue in production. It doesn't give the error in Dev. Not sure what is wrong :(

I don't recall installing it. It says it was published 9/21/2016 so I don't think it was installed. But it works in our Dev environment which has the same version, just not here. Very strange.
