I find that the Activity Tracking function in GP does not track Additions or Deletions of Purchase Orders. It tracks the Sales Order Processing documents, but not Purchase Order. What could be the reason for this? Is there any quick way to enable tracking of Purchase Orders?
GP help files should be updated as they still talk about addition/deletion to trx tables on Save and delete button.

There is no such thing then change tracking in SOP line items or POP line items in GP.. the only change that is tracked is the transfer from one SOP type to the other..
You'll have to resort to a 3rd-party module to do Audit logging .. like FastPath.
Microsoft used to provide a tool called Audit Trails until version 2010... but that has been discontinued as far as I know.. It is sad because it was allowing you to track pretty much any changes on any GP table..

You are right, it's not tracking for PO.
