Pipeline Chart re-order - Option Set Values

Hi, I have a pipeline chart that needs to be re-ordered.  I have an Intake Stage OS that needs to be re-ordered by OS value.  However, I do not want to change the OS values as they may be referenced by automation and do reference existing values in Prod.  Here are screenshots to illustrate:

In the above screenshot, the 8 - Welcome to ACES should be at the bottom of the funnel, but it is not bc the value is 006

I have the XML, which probably then needs an update.  If anyone has ideas on how the XML can be updated to re-order, I would greatly appreciate it!  Thanks in advance.
