I want to ask that when I enable change tracking in an entity, will it update the data that is altered in previous dates?

change tracking doesn't update any data.
But perhaps you mean what will be exported if you enable change tracking on an entity and run export?
Whenever you create a new data project that exports data with incremental push (=change tracking), the first export will be a full push (=all data that the entity exposes). After that each subsequent export will contain only records that the change tracking has identified as changed.
