Anyone know if there is any matrix available with all the security roles and corresponding licensing requirements, other than those in licensing guide, available? Would appreciate if it was in a format that would make it easy to segment/pivot (excel).

Microsoft only provided information related to the standard roles in the licensing guide. They did not provide it in another way. If you want to have details in Excel, you would need to create such overview yourself.
Usually, organizations create their own specific roles. In that case, you would need to document it yourself anyway.
