Is there a way to change the descriptions of the discipline stages in HR?

Yes, you can do this by modifying the window. Open the window then go to Modify Current Window. Click to select the Discipline Combo field. In the Properties window, on the Object tab, double-click on the Discipline Combo field. In the Field Definition window, click on Open. In the Data Type Definition window, click on the button with 3 dots to the right of Static Values. Select the value to be replaced. Type in the New Value then click on Replace.
That should do it!
