I can only see a certain selection of fields in here and cannot add in the field 'To' to find an email which was sent to a particular user. Any ideas?

Looks like this is a limitation due to it being an activity pointer field.

Yes, this is limitation in CRM activity party, however you can do adv find with this
(I have answered in one of forum asking about this also)
That is using the combination of Activities party and email + contact also
missdynamicscrm.blogspot.sg/.../crm-advanced-find-to-show-customer-not-yet-received-email-still-pending-send-or-failed.html
