Service Order - cost vs agreed price

Hello
I have a scenario on service orders which keeps coming up frequently.
We set up a service order and agree that a resource will take 5 hours to complete a task for a customer. We send this as a pdf document to the client and it is agreed. 
The engineer goes on site and instead of 5 hours, it takes 7 hours to complete the task. The engineer updates his timesheet and allocates 7 hours to the service order in question.
The service order now displays 7 hours. We wish to modify the service order to 5 hours as agreed with the customer and invoice accordingly but at the same time we want to keep the cost of the 7 hours for the engineer's work. Is there an optimum way to achieve this with Service mgt?

    In service orders, when you post, you can specify whether a quantity will be invoiced or consumed. For example, the engineer's work line has a total quantity of 7, you can allocate 5 as the quantity to invoice and 2 as the quantity to consume.
