Associating hierarchy types

I have created a new Category hierarchy and would like to associate it to the Procurement Hierarchy. My goal is to have the Category hierarchy I’ve created become the default when I create a new catalog.
 
How do I disassociate a category hierarchy?
 
For example in the screen capture below I have MX gear as my Category hierarchy. I am unable to delete any of the current category hierarchies.

*Note* I have tried to delete the Procurement Hierachy1 however I receive the following error message below.
