I'd like to add some columns to the Delivered emails view under the Email Insights Delivery tab: Is that possible, and if so, how?

We currently do not support the ability to make any customizations in the "Insights" tab. If you wish to create custom analytics reports in PowerBI by leveraging the marketing interactions data from the product, we'd recommend going through this blog post (Custom Interactions Reporting in Dynamics Marketing - Microsoft Dynamics Blog) which provides guidance to help export your real-time marketing and outbound marketing interaction data to your managed data lake from which you could then create custom analytics reports in Power BI as per your business needs. We're also working to convert this blog into a public documentation soon and we can update this thread once the public documentation is ready.
