Hi, Sorry I want to add a few more information that I explored.
You can save multiple versions of Purchase Quote using standard functionality in International version at least.
Use the action Archive Document.
To access the archived versions click on number of archived document.

It is not possible in standard NAV. However you can use Change Log feature of NAV. In Change Log you select the tables and fields whose changes you want to log and then activate Change Log. In this way you can see all the changes in the values of tables and their fields.
