Can anyone tell me how to get Outlook working in GP 2013 R2? I know it's supposed to work (because I've used it at other companies) but have been told by our Consultant that it doesn't.

That's just weird. I remember there was an issue with Office 2007 and GP 10.0 not being compatible but I haven't seen issues with Office 2010 and GP 2013R2...we just don't use it because we remote into a terminal server for GP, so no need for outlook except to send emails to vendors/customers

Please read, this has helpful information regarding setup in GP to facilitate the emailing of documents. Verify the versions in Outlook and GP are compatible.
@fjackson26 do you mean by email setup?
If you mean by email setup then use steps to setup Tools->Setup->Company->eMail settings.
** before setup please make sure that you already you have setup the Outlook client with the email profile
If you installed a 64-bit GP, I believe you also need a 64-bit Outlook to use the MAPI connector.
If you're using 64-bit Office/Outlook, the Server Type in the System Preferences window must be set to Exchange.
